Take a Look at the World’s Lightest Dessert that Weighs a Miniscule 1 Gram

If you’re worried about calories while indulging in desserts, fret no more as Bompas & Parr have invented a perfect little piece of sweetness for you! The renowned food design studio has created an incredibly lightweight edible meringue which sits at a mere one gram! Yes, that’s right.

Developed with the help of materials experts at the Aerogelex laboratory in Hamburg, the dessert equips the properties of the world’s lightest solid called Aerogel which was invented in the 1930s by American chemist Samuel Kistler. The ingenious material retains the internal matrix of gel and comprises between 95 and 99.8 per cent air. This gives it an extremely light sponge-like structure which has now been taped by Bompas & Parr in their latest creation.

The marquee’s meringue is created with a hydrogel of egg white, which is cast in a mould before being submerged in a bath of calcium chloride and water. The liquid in the jelly is then replaced with liquid carbon dioxide that eventually separated out such that only a skeleton of the original gel stays behind. The result being a dollop of sweetness comprising 96 per cent air and weighing in at just one gram.

Bompas & Parr’s revealed the exclusive delight at the King Abdulaziz Centre for World Culture (Ithra) in Dhahran, Saudi Arabia during Ithra’s Creativity Season, Tanween, from 10 to 26 October 2019. Although we missed tasting the tiny meringue wonder this time, here’s hoping for the marquee to unveil it again in the future!
